Ever tried or thought about making your own BBQ sauce? I have! I enjoy being creative with food so I thought why not try and make homemade BBQ sauce for baby back ribs. Yum, its only 8 am and I'm already dreaming about the sauce dripping down my chin while biting into a meaty rib. Ok, enough dreaming and let's talk about this homemade BBQ sauce.

I found an amazing recipe on one of my favorite recipe sites.

  • ⅔ Cup ketchup
  • ½ cup cider vinegar
  • ¼ cup brown sugar
  • 2 teaspoons pimentón (smoked Spanish paprika)
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly cracked black pepper

Combine all ingredients in a small saucepan, bring to a simmer over medium heat and cook for 5 minutes. I personally like to season the ribs with salt and pepper before putting on the grill and wait for the ribs to be about 50% done before I start putting on the sauce. 

Another specialty of mine is Pico de Gallo. I came up with my own recipe which isn't very different then a lot of people make but it's my own. I literally like to make a batch and put it on everything. I recently came across a recipe called cowboy caviar. To me, it's basically Pico de Gallo with a few extra ingredients. So, of course, I had to make it but I kind of just made up my own recipe on this one just after looking at the picture.

  • 8 plum tomatoes
  • ½ large red onion
  • Handful of chopped cilantro
  • 1 ½ freshly squeezed limes
  • 1 can black beans drained and rinsed
  • 1 can of corn drained
  • 1 red pepper, diced
  • 1 green pepper diced
  • ½ jalapeno diced 
  • Salt and pepper to taste

Drizzle a little EVOO. Mix it all together and voila you have "Cowboy Caviar". You can eat it with tortilla chips.

So I decided I'm going home for lunch to make this because I just can't stop thinking about it. Actually never mind I have too many meetings today. This will be a Memorial Day make.
